Pan Fried Potatoes and Peppers
5-7 Russett potatoes Butter
Red & green peppers Salt & pepper
1/2 med. onion
Chop onion and add to frying pan with 2 tbsp. butter. Saute till soft. Cube potatoes into uniform pieces. Chop peppers. Add to skillet with additional butter. Cook over medium heat about 20 minutes until potatoes are almost done. Increase heat to med-high and brown potatoes. Season with salt and pepper.

Mom's Apple Crisp
1 cup flour 1/3 cup shortening
1 cup sugar 6-7 apples
1 tsp. baking powder Cinnamon
3/4 tsp. salt
1 unbeaten egg
Peel apples, slice thinly and place in a 8x8 pan. Combine dfry ingredients, add shortening and crumble with hands. Add egg and mix. Put over apples and sprinkle with cinnamon. Bake at 350 for 30-40 minutes.

Mom's Banana Bread
This is the best banana bread recipe I've ever found, from my mom!
1/2 cup fat 3 ripe bananas
1 cup sugar 2 cups flour
2 eggs 1 tps. salt
3 tbsp. buttermilk 1 tsp. soda
or sour milk
Cream fat. Work sugar in slowly. Add well beaten eggs and mix thoroughly. Sift flour, salt, and soda. Fold flour mixture into fat and sugar mixture alternating with milk and mashed bananas. Do not beat. Turn into greased bread pan. Bake at 350 degrees for about 1 hour.

Orange Tarragon Chicken
This is one of the easiest recipes there is for chicken and very flavorfull.
Brown chicken (your choice of white, dark, or combination) in olive oil. Add one small can of frozen orange juice (thawed) to pan. Add one juice can of water. Add about 1 tbsp of tarragon. Cover and simmer approximately 1/2 hour to 45 minutes until sauce is reduced to gravy texture. Serve with asparagus - sauce is terrific on vegetables also.

1 package yellow cake mix
4 cups chopped fresh or frozen rhubarb
1 cup sugar
1 cup heavy whipping cream
Prepare cake batter according to package directions. Pour into greased 13x9x2 inch baking pan. Sprinkle with rhubarb and sugar. Slowly pour cream over top. Bake at 350 degrees or until golden brown. Cool 15 mnutes before serving. Garnish with whipped cream. Makes 12-15 servings.
You can also replace half the rhubarb with pineapple for added flavor.
